I love dessert! I could never, EVER, cut it out of my diet. But over the years I have come to the realisation that in order to hit my health and fitness goals, I need to find a happy balance. That’s why I get very excited when I discover new and healthy treats, and probably what recipes I’ll blog about the most.
Different versions of healthy ice-cream and sorbet’s seem to be popping up all over Pinterest at the moment, so I thought it was about time I tried doing my own healthy sorbet. To my surprise, not only did it work, but it actually tasted delicious. It also got the tick of approval from the hubby, winning! Due to my personal victory, I had share the recipe with you guys. So here it is, my yummy AND healthy, mango and raspberry sorbet.
Mango and Raspberry Sorbet (serves 2-4)
- 1/2 cup of water
- 4 cups (approx 700g) of frozen diced mango
- 1 punnet of frozen raspberries
- 1 medium lemon (squeezed)
- 1 teaspoon of organic coconut sugar (this can be substituted for raw/pure honey, or any other type of natural sweetener)
Place all ingredients in a blender and mix until smooth. Place mixture in a tray or container and freeze for approximately 3 hours. Be careful not to let the mixture get too hard, you want it a little soft so you can scoop it out easily. After the mixture is set, serve and enjoy 🙂
It’s honestly so simple, and you don’t need to muck around with too many ingredients. I think this recipe will be a new favourite in our house, and I can’t wait to experiment with different types of flavours. Maybe next time I’ll even try some healthy ice-cream…
